Tomato and Cucumber with Lemon Splash

They key to being healthy is eating good healthy food. I find that if the veggies are dressed up in someway, and with a sweeter dressing, they are consumed. It takes a little investigating to find out who likes what, but this one is an all around favourite. The dressing is light and pleasant. I serve this often as a side dish or I have it ready when dinner isn’t early enough so they can munch on something healthy and light before the main meal.

Ingredients
250gms Tomatoes sliced or halved if they are small
1 Cucumber sliced
½ lemons
2 Tablespoons Olive oil
Good pinch of Salt
1 teaspoon sugar

Directions:
Slice the tomatoes and cucumbers as you wish.
Place them in a bowl and sprinkle on the salt and sugar.
Squeeze on the juice of half a lemon. (You may need to pick out the seeds afterwards.)
Dribble the olive oil over top.
Take a fork and give it a good mix so that there are no grains of sugar and salt on the vegetables.
Put the bowl in the fridge for a half an hour or so.

Tomatoes:
You can’t really go wrong with tomatoes. They are high in vitamin c and full of wonderful antioxidants. The more you eat the better off you are. Cooked or raw, they are good for you.
